Composition of prosciutto – Italian dry-cured ham
Prosciutto (crudo) is a cured ham from an air-dried pig’s foot. Prosciutto comes from the Italian prosciugare, which is the name of the process whereby salt draws moisture from meat. It is often sliced wafer-thin and used as an antipasti. A prosciutto ripens for about 10 to 15 months, but this depends on the type and size.
