Fuet, literally ‘whip’, is a Catalan long, thin, fermented and dried sausage. It has a slightly sweet, slightly peppery taste. The sausage stands out because of its thin shape and the layer of mould that forms during the drying process. The fungus is Penicillium candidum, which is also found on brie and camembert.
Fuet is made from lean pork meat, pork bacon (back fat), black pepper, garlic, cloves, coriander, salt and sugar, among other ingredients, in a sheet of thin pork casing. The fuet with garlic has the subtle taste of garlic.
