Composition of fuet
Fuet, literally ‘whip’, is a Catalan long, thin, fermented and dried sausage. It has a slightly sweet, slightly peppery taste. The fuet is notable for its thin shape and the layer of mould that forms during the drying process. This fungus is the Penicillium candidum, which is also found on brie and camembert.
Fuet is made from lean pork, pork bacon (back fat), black pepper, garlic, cloves, coriander, salt and sugar, in a skin of thin pork intestine. The fuet with wild boar has the subtle taste of wild boar.
When do we eat this fuet?
The fuet with wild boar can actually be eaten at several times of the day. At breakfast, lunch or brunch. It is particularly tasty with drinks. Nice wine with it, a cheese or olives. A real must is combining different fuets; enjoy the different flavours!
All saucisson of Monsieur Saucisson contain no gluten. With 1 exception: the fried onion sausage. The sausages are not lactose free. In addition, all sausages may contain traces of nuts.
How long and how do I store the sausages?
The sausages will keep for a minimum of 2 months. They are best kept outside of the fridge in a dark and dry place. You can hang the sausages up in the kitchen or cellar. Cut into pieces, the sausages will keep for about 4 to 6 weeks.
