Spinazie, Chorizo & Halloumi Salad

4 handfuls of baby spinach
250 g halloumi cheese
2 cloves of garlic
4 tbsp olive oil
24 green asparagus
150 g chorizo
4 tsp balsamic vinegar
Divide the baby spinach among 4 plates. Cut the halloumi into 4 equal pieces and crush the garlic. Then marinate the halloumi pieces in a marinade of the crushed garlic and olive oil. Next, get to work on the asparagus. Grab a pan and set it over medium to hot heat. Place the asparagus in a pan with olive oil until they are completely covered with oil and sprinkle a little salt on them. Then grill them in the pan until they look nicely contoured.
Next, fry the halloumi together with the marinade in a pan. Fry them until the cheese starts to look golden. You’ll end up putting these on top of your salad. When these are done fry the chorizo in a clean pan. When it is crispy, it is ready! Spread over the plates and drizzle your salad with a little olive oil, salt, pepper and balsamic dressing. And you’re done! Enjoy your meal!
